Happy Hanukkah
Even though I am no longer with my Jewish husband, some traditions are just too luscious to ignore. I celebrate Hanukkah every year because I love the story behind it and the food to celebrate it! So I invited some friends over to share the latkes and sour cream and apple sauce. I cheat a bit on the latkes using Manischevitz mix, but I grate potatoes and onions into it so feel a bit of me is included in each "cake." They were crispy on the outside and soft inside -- perfecto!
And the best news: only leftovers for one meal. The truth to latkes, at least mine, is they rarely taste as good the second day. But .......... nearly as good.

Thank you for reminding me that I haven't made any latkes yet this year. Yes, they are best when they are first hot out of the skillet. I love the taste of the cold sour cream on the hot latkes. Yummmm!
